Because if you think vegetables aren't tasty, you aren't preparing them properly.
Glucomannan
Glucomannan is made from the ground up roots of the konjac plant. It thickens like corn starch or flour, but without adding refined carbohydrates to your food. It is often in health food stores in capsules, which are intended to be taken as a supplement to aid weight loss. I'm not really into weight loss supplements. If you worry about ingredients, weight and health worry about themselves. But I have a bottle of powdered glucomannan (not in capsules) that I use here and there to reduce the amount of flour in my diet. You should be careful with a big bottle of the powder, particularly around children. The powder expands and absorbs liquid, which is quite a choking hazard if you, say, ate it from a spoon or poured it in your mouth. So don't do that.
