Coconut sugar is made from the blossoms of the coconut tree. It is tasty and low in calories. It is also gentle on the body and measures like regular granulated sugar. I suppose its downside is its cost. Except I count that as another upside. It makes me reconsider whether I really need to make that sweet treat. This makes moderation in sweet things easier.
"Gentle on the body" means it does not spike blood sugar levels like most sweeteners. I'm sure that it can if it is eaten in quantity. Nonetheless, its glycemic index is quite low, making it a better sweetener choice than white or brown sugar. This is not clearance to eat it by the spoonful. As with all things, moderation.
